Simple Chickpea Salad

Serves: 4
2 cups chickpeas, prepared
2 tomatoes, chopped
1 cucumber, chopped
1/2 red onion, sliced thinly
1 TB olive oil
2 TB lemon juice, freshly squeezed (about 1 lemon)
1/4 tsp salt

● Toss to combine and serve chilled.
