Salad:
14 oz can tomatoes, diced
1/4 cup green onion, minced
3 TB cilantro, chopped
14 oz can corn
can black beans
2 cups chickpeas, prepared
1 green pepper, chopped
1 red pepper, chopped
Vinaigrette:
1/2 cup olive oil
1 1/2 tsp cumin
1 TB chili powder
5 tsp red wine vinegar
● Place all ingredients in medium-sized bowl and toss.
● Ready to serve.
